Here is a Chutney powder for idli or dosa. Chutney powder or Chutney pudi/podi is a dry powder made with lentils, seeds, leaves and nuts. Basically it is a spiced curry powder served as a condiment in South India.

Chutney powder is traditionally prepared using lentils/dals like chana and urad dals. But it can also made with peanut, sesame seeds, flax seeds and even with fried gram / roasted chana dal.

Moreover, these chutney powders are substitute for chutneys. Here I am sharing simple and generally used Karnataka style chutney powder with lentils.

Further, In South India, each state will have their own form of chutney powder recipes with different names like, chutney pudi,  chutney podi, idli podi, dosa podi, curry powder, gunpowder recipe.

How To Make Chutney Powder

The making of chutney powder recipe is so simple. Dry roast the ingredients like chana dal, urad dal separately until they turns golden brown. Then roast remaining ingredients like, dry chilli, curry leaves, dry coconut and tamarind with little oil. Ground everything into fine powder with salt, hing and jaggery to get tasty chutney powder. Here jaggery is optional you can skip it.

Usually chutney powder is served as a side dish with dosa, idli, roti, chapati and even tastes grate with curd rice and hot steamed rice along with a dollop of ghee.

Ingredients

  • 1/2 cup Chana Dal/ Bengal gram
  • 1/2 cup Urad Dal
  • 1 cup Dried Orange peel
  • 1 tsp coconut oil
  • 8 to 10 red chilli
  • 1/2 cup curry leaves
  • lemon size tamarind
  • 1/4 cup grated dry coconut/kopra
  • 1/2 tsp hing
  • 1 tsp salt
  • 1 tbsp jaggery

Instructions

  • Firstly, heat a pan on moderate flame and add chana dal
  • Dry roast chana dal for 2 mins until it slightly turns to golden brown color
  • Take out the roasted chana dal to a plate
  • Next add urad dal and agian dry roast for 2 mins
  • Likewise take out roasted urad dal to a plate
  • Further add dried orange peel and dry roast for a min and take out to plate
  • Now add a tsp of coconut oil and add dry chilli
  • Again roast it for a min and further to the same pan add curry leaves and tamarind
  • Dry roast the ingredients again and keep the flame low
  • Finally add grated dry coconut or kopra and roast it for a min and turn off the heat
  • Now add roasted lentils like chana dal, urad dal and orange peel to pan and mix all the roasted ingredients well
  • Allow to cool this mixture for 5 mins and then transfer to a blender jar
  • Additionally add hing, salt and jaggery & blend this to a powder form
  • Now healthy & tasty chutney pudi/ lentils curry powder is ready to serve!
  • Store this in an airtight bottle
  • Enjoy this chutney pudi as a side dish with dosa, idli, roti and even with hot rice with a spoonful of ghee
