Black rice pudding is a healthy & nutritious dessert with jaggery. The benefits of black rice are numerous. Nowadays this black rice is consider to be a super food, because of its healthy nutrients, rich antioxidants. Most importantly, In Ayurveda black rice plays a major role. Ayurveda also uses black rice to cure eye, nerve and muscle related diseases. It mainly aids in Panchakarma treatment.

Furthermore black rice is enriched with an antioxidant called “Anthocyanins” which improves memory and lower the risk of heart disease and cancer fighting. Also it is the only rice to contain the antioxidant ‘anthocyanins, which is found in dark-hued fruits and vegetables, like blueberries, blackberries, dark grapes, dark cherries, purple brinjals, purple cabbage and purple corn amongst others. Most importantly, black rice is unpolished & much healthier and also a good choice rather than white polished rice.

Even more black rice pudding is a simple yet delicious dessert recipe. Although black rice pudding is traditionally prepared with full fat coconut milk. This makes the pudding very rich and tasty. But here I have used light coconut milk, which also works well.

Here the tasty ingredient is banana. You can add other fruits like mango, but when you add chopped banana, its taste doubles. So I prefer to add banana rather than other fruits. More over we have not used refined sugar here. Instead of that jaggery is used.

In addition to this, the Ayurvedic spices like nutmeg powder, dry ginger powder and cinnamon powder along with cardamom powder, enhances the flavor of the pudding, as well as taste too.

Black rice pudding is a healthy & nutritious dessert with incredible health benefits.

Ingredients

  • 1 cup black rice / forbidden rice organic
  • ½ cup jaggery
  • ½ cup coconut milk fresh
  • ½ tsp dry ginger powder
  • ¼ tsp nutmeg powder
  • ¼ tsp cinnamon powder
  • 1 tbsp ghee/clarified butter
  • 1 tsp cardamom powder
  • ½ cup banana organic, chopped
  • 1 tbsp desiccated coconut

Instructions

  • Firstly take a bowl and add 1 cup black rice/forbidden rice. Add water and wash 2 to 3 times and drain the water.
  • Now heat a cooker pan and add the washed & drained black rice. Then add 3 cups of water.
  • Cover the cooker lid and pressure cook for 3 whistles. 
  • When the steam settles down, carefully remove the cooker lid and mix it once.
  • Next heat another pan on medium flame and add jaggery.
  • Then add 2 tbsp water. Stir well until the jaggery completely melts.
  • Now add cooked black rice. Mix everything well and cook this mixture for 2 to 3  mins.
  • Further add fresh coconut milk and give a good mix. 
  • Boil this mixture for a minute or two. lower the heat.
  • Similarly add dry ginger powder, nutmeg powder and cinnamon powder.
  • Give a quick mix. Also add 1 tbsp ghee and gently mix well.
  • Likewise add cardamom powder and chopped banana.
  • Give a final mix and turn off the heat.
  • Finally sprinkle desiccated coconut as topping over the pudding.
  • Now the healthy & nutritious black rice pudding is ready to serve.
