So here is a foxtail millet benefits and foxtail millet recipe for weight loss, that is Foxtail millet Vangi bath, a traditional recipe from Karnataka made with rice, brinjal and flavorful vangi bath powder.

Foxtail millet vangi bath is a healthy & nutritious recipes. Basically vangi bath is a traditional recipe from Karnataka. Usually vangi bath is prepared from cooked rice, egg plant/brinjal with authentic homemade vangi bath powder. It is a flavorful dish with aromatic spices & herbs.

Most importantly, millets are the good substitute to white polished rice. Hence this foxtail millet vangi bath is completely a healthy version. It’s so simple to make and tastes great as well. Also this is a no onion, no garlic recipes. It is an ideal recipe for lunch/dinner and a filling recipe too.

Even more, you can use any type of the millet for making vangi bath. But here I have used Foxtail millet. It has many names in different languages. ‘Navane’ in Kannada, ‘Thinai’ in Tamil, ‘Korralu’ in Telugu. As usual it is also a good source of fiber and aids in digestion. It was the staple diet among the people of ancient India.

Is foxtail millet good for diabetes?

Yes of course.  Unlike polished rice, foxtail millet releases glucose steadily without affecting the metabolism of the body. Studies shows that people with type 2 diabetes who ate foxtail millet recipes may lowered their blood sugar, insulin, cholesterol and triglyceride levels. Foxtail millet/korralu/navane vangibath is a healthy & nutritious recipes. It's a simple and tasty recipe. Most importantly, millets are good for diabetes. Any recipes made with foxtail millet(Thinai) can significantly bring down sugar levels for those who suffering from type-2 diabetes. Further millets are gluten free & rich in fiber. Thus helps in weight loss too.

Ingredients

  • 1 cup foxtail millet organic
  • 3 cup water
  • 2 tbsp oil
  • ½ tsp mustard
  • ½ tsp cumin
  • 1 tsp urad dal
  • 1 tsp chana dal
  • ¼ tsp turmeric powder
  • ½ tsp hing
  • 15 gram cashews
  • 4 to 5 curry leaves
  • 1 brinjal (purple)/egg plant chopped & soak it in water
  • 1 tsp salt
  • 2 tbsp tamarind juice
  • 1 tbsp palm jaggery (optional)
  • 2 tbsp homemade vangibath powder
  • 2 tbsp grated coconut
  • 1 tbsp coriander leaves finely chopped

Instructions

Preparations for making vangibath:

  • Firstly, wash foxtail millet & soak it in water for 15 mins
  • Next drain out the water and add this in a pressure cooker with 3 cups of water
  • Pressure cook for 3 whistles and keep it aside. Allow to settle down steam on its own & then spread the cooked millet on a plate.
  • Meanwhile chop brinjal, about 1 inch piece and add the chopped brinjal in water to avoid discoloration
  • Similarly soak tamarind juice & squeeze it. Keep it aside

Making of Foxtail millet vangibath:

  • Heat a pan on moderate flame and add oil
  • When the oil is hot enough, add the tempering ingredients like mustard, cumin, urad dal, chana dal, turmeric powder and hing
  • Saute all the ingredients well for 2 mins
  • Next add cashews and saute it again until cashews turns to golden color
  • Further add curry leaves and chopped brinjal
  • Mix well together and add little salt
  • Stir well until brinjal becomes soft
  • Then add tamarind juice & palm jaggery (optional).
  • Give a good mix until jaggery melts completely
  • Additionally add salt & vangibath powder and mix well
  • Simmer for a minute and then add cooked foxtail millet
  • Mix everything well and turn off heat
  • Finally garnish with grated coconut & finely chopped coriander leaves
  • Now the diabetic diet foxtail millet vangibath is ready to serve!
