Garam masala is an aromatic blend of spices. This is a simple, quick spice mixture used in the preparation of Indian dishes. Easy to make. It gives nice aroma & taste to the food.

Ingredients

  • 2 tbsp coriander seeds
  • 2 tbsp cumin
  • 1 tbsp black pepper
  • 2 star anise
  • 6 to 8 cloves
  • 5 to 7 cardamom
  • 2 tbsp fennel seeds
  • 4 to 6 cinnamon pieces
  • 2 to 4 mace (javithri or japathre)
  • 1/2 nutmeg
  • 2 to 3 bay leaf

Instructions

Making of homemade garam masala:

  • Firstly, heat a pan on medium flame and add coriander, cumin seeds.
  • Dry roast for a minute. Do not burn. Transfer this to a bowl.
  • Then add black pepper, star anise, cloves and cardamom pods.
  • Again dry roast for a minute and transfer all roasted ingredients to a bowl.
  • Similarly add fennel seeds and roast for a minute & transfer this to a bowl.
  • Likewise add cinnamon pieces, mace (javithri or japathre) and nutmeg. 
  • Dry roast everything for a minute and pour this to a bowl.
  • Finally add bay leaf. Slightly roast it and transfer to bowl. Turn off the heat.
  • Allow to cool all the roasted dry ingredients for 3 to 4 mins. 
  • Next transfer all the dry spices to a blender and blend it to a fine powder.
  • Now the fresh, homemade garam masala is ready. store this in an air tight glass jar and use it while making curries or other Indian recipes.
