Here’s a recipe on How to make Carrot halwa without refined white sugar? Carrot Halwa is an easy Indian dessert recipes, popularly known as Gajar Halwa or Gajrela. This is one of the delicious and Indian classic sweet recipe. Basically, gajar halwa is a carrot sweet pudding, prepared with grated carrots, milk, ghee, sugar and some dry fruits. While making carrot halwa, always choose fresh, tender and juicy carrots. Also you can use any colored carrots like red, orange or purple. But the outcome is so delicious and looks very colorful, because of the vibrant carrot color.

Further, I have shared a healthy version of carrot halwa.  As we have not used refined sugar. Instead of that here coconut palm sugar is used. This sugar is unrefined and derived from the coconut palm tree and touted as being more nutritious and lower on the glycemic index than sugar. It is a natural sugar made from coconut palm sap. This is brown in color and similar to raw sugar, but smaller in size. Furthermore carrots are the best healthy vegetable which contains healthy nutrients. Carrots are high in vitamin A and thus helps to improve vision. Also good for glowing skin.

Moreover carrot halwa is a perfect sweet for any occasions, either festivals or any celebrations. Usually this halwa is prepared in North India especially during winter season. Hence this is a good winter sweet which is made very often. In addition, it’s so easiest sweet that everyone like very much all the time. You can serve carrot halwa hot, warm or chilled depending on your preferences.

Carrot Halwa is popularly known as Gajar ka halwa or Gajrela. One of the delicious and popular sweet recipe of India. Gajar halwa is prepared with grated carrots, milk, ghee, sugar and some dry fruits. This is the healthy version of gajar halwa, as we have not used refined sugar. Instead of that, coconut palm sugar is used.  Gajar halwa is one of the easiest and delicious sweet recipe which is perfect for any occasions, either festivals or any celebrations.

Ingredients

  • 3 cup carrots grated, use tender, juicy carrots
  • 3 tbsp ghee
  • 1 cup milk organic
  • 1/2 cup coconut palm sugar organic
  • 10 grams cashews finely chopped
  • 10 grams almonds finely chopped
  • 10 grams pistachios finely chopped
  • 1/2 tsp cardamom powder

Instructions

  • Firstly wash the carrots in a clean water and then peel it.
  • Next grate the peeled carrots with hand grater or with food processor. Keep this aside.
  • Meanwhile finely chop the dry fruits like cashews, almonds and pistachios. 
  • Now heat a cast iron khadai or any thick bottomed pan on moderate flame and add ghee.
  • Once the ghee is melted up, add grated carrot. Mix well and cook the carrot for 4 to 5 minutes, until they are slightly soft. Stir often.
  • Then add milk and give a good mix. 
  • Bring this mixture to a boil in a low flame for 15 to 20 mins until milk evaporates. 
  • Stirring in between so that milk does not stick to the khadai.
  • Also add coconut palm sugar and stir for 2 to 3 mins until the mixture thickens.
  • Similarly add ghee and give a quick mix. Simmer for a minute or two and cook well.
  • Finally add chopped dry fruits and cardamom powder. 
  • Gently mix everything and turn off the heat.
  • Now the delicious carrot/gajar halwa is ready to serve.
  • Serve carrot halwa hot, warm or chilled depending on your preference.
