This Chutney is a simple, quick and healthy recipe made from drumstick leaves. It is served along with chapathi, rotti, dosa or along with steamed rice and ghee.
Fresh Moringa leaves provide a substantial amount of vitamin C. They have iron, fiber, folates, vitamin A, vitamin C , and minerals. These leaves are tasty when boiled and cooked with spices. Mature leaves are sometimes a little bitter; use tender leaves.

Ingredients

For Chutney

  • 1 tsp Oil
  • Green Chilli as per spicy level
  • ½ cup Moringa (Drum Stick) Leaves washed
  • ½ cup Grated Coconut
  • 1 tbsp Tamarind
  • 1 tsp Salt
  • 1 tsp Jaggery

For Temering

  • 1 tsp Oil
  • ½ tsp Mustard
  • ½ tsp Cumin
  • ½ tsp Urad Dal
  • ½ tsp Hing (Asafoetida)
  • 3 to 5 Curry Leaves

Instructions

Prepare Chutney

  • In a heating pan, add Oil
  • Once Oil is heated, add Green Chilli as per spicy level
  • Add cleanly washed Moringa Leaves
  • Saute well for 2 to 3 mins as the leaves reduced to half in quantity. Do not over cook.
  • Transfer this mixture to a blender
  • Add Grated Coconut, small ball size Tamarind, Salt, Jaggery
  • Add little water and blend to a fine paste

Prepare Tempering

  • In a small heated pan, add Oil
  • Once Oil is heated, add Mustard, Cumin, Urad Dal, Hing and Curry Leaves
  • Saute well till splutters
  • Finally add the tempering to the blended chutney
  • Enjoy healthy chutney with chapathi, rotti, dosa or along with steamed rice and ghee
